Ingredients
  

1 lb ground beef (or Italian sausage)

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

4 cups beef broth

2 teaspoons Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

2 cups uncooked pasta (like lasagna noodles broken into pieces)

2 cups fresh spinach (or kale), chopped

1 cup ricotta cheese

2 cups shredded mozzarella cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Prep the Meat: In a skillet over medium heat, brown the ground beef (or sausage) until fully cooked. Drain any excess fat and transfer the meat to the crock pot.

    Sauté Aromatics: Add the diced onion and minced garlic to the crock pot with the meat.

      Add Tomatoes and Broth: Stir in the crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper into the mixture in the crock pot.

        Cook: Cover and cook on low for 4 hours or high for 2 hours.

          Cook the Pasta: About 30 minutes before serving, stir in the uncooked pasta and freshly chopped spinach. Cover and continue to cook until the pasta is tender.

            Stir in Cheese: Just before serving, stir in the ricotta cheese and half of the mozzarella cheese. Let it melt for a few minutes.

              Serve: Ladle the soup into bowls, top with the remaining mozzarella cheese, and garnish with fresh basil or parsley if desired.
