Ingredients
  

2 sheets of puff pastry (thawed)

8 oz (225g) sliced ham

8 oz (225g) cheese (Gruyère or Swiss works best), sliced or shredded

1 egg (beaten, for egg wash)

1 tablespoon Dijon mustard

1 tablespoon fresh chives, finely chopped (optional)

Salt and pepper, to taste

Sesame seeds (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the puff pastry sheets on a lightly floured surface to smoothen any creases. Cut each sheet into 6 equal squares (or rectangles if you prefer).

      Layer the Fillings:

        - On half of the puff pastry squares, spread a thin layer of Dijon mustard.

          - Place 1-2 slices of ham on top of the mustard.

            - Add a generous amount of cheese over the ham.

              - Season with salt, pepper, and sprinkle some chopped chives if using.

                Top with Remaining Pastry: Take the reserved puff pastry squares and place them on top of the cheese layer to form a stack. Gently press down to seal the edges. Use a fork to crimp the edges for a decorative finish.

                  Apply Egg Wash: Brush the tops of each pastry stack with the beaten egg to give them a beautiful golden color when baked. Sprinkle sesame seeds on top for added crunch, if desired.

                    Bake: Place the stacks on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

                      Cool and Serve: Once baked, allow the stacks to cool for a few minutes before serving. They can be enjoyed warm or at room temperature.
