6 slices of thick bread (preferably brioche or challah)

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

2 tablespoons sugar

1/2 cup bread crumbs (preferably panko for extra crunch)

4 tablespoons butter (for frying)

Maple syrup (for serving)

Powdered sugar (optional, for dusting)

Instructions
 

Begin by cutting each slice of bread into bite-sized cubes, about 1-inch pieces. Set aside.

    In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg, and sugar until well combined.

      Gently fold the bread cubes into the egg mixture, ensuring each piece is evenly coated. Allow to soak for about 5-10 minutes, so the bread absorbs the custard.

        Preheat a large skillet or frying pan over medium heat and melt 2 tablespoons of butter.

          While the pan heats, place the panko breadcrumbs in a shallow dish. Using a fork or tongs, take each soaked bread cube and roll it in the breadcrumbs until fully coated.

            Once the butter is sizzling, carefully place the breadcrumb-coated French toast bites into the skillet. Fry in batches if necessary, avoiding overcrowding the pan.

              Cook for about 2-3 minutes per side or until golden brown and crispy. Add more butter as needed for subsequent batches.

                Once cooked, transfer the French toast bites onto a plate lined with paper towels to absorb any excess oil.

                  Serve warm, drizzled with maple syrup and a dusting of powdered sugar if desired.
