4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and black pepper to taste

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Olive oil, for frying

Prepare the Chicken: Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick. Season each piece with salt and pepper.

    Set Up the Breading Station: In three shallow bowls, place the flour in one, whisk the eggs and Dijon mustard together in the second, and combine panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, and a pinch of salt and pepper in the third.

      Bread the Chicken: Dredge each chicken breast first in the flour, shaking off excess. Next, dip it into the egg mixture, letting the excess drip off. Finally, coat it with the breadcrumb mixture, pressing down to ensure an even coating.

        Fry the Chicken: Heat a large skillet over medium heat and add enough olive oil to cover the bottom of the pan. Once hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

          Assemble the Dish: In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top, then spoon more marinara sauce over each piece. Sprinkle the shredded mozzarella cheese liberally on top.

            Bake the Chicken Parm: Transfer the dish to the preheated oven and bake for about 15 minutes, or until the cheese is melted and bubbly.

              Serve: Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves before serving. Pair it with spaghetti or a fresh side salad for a complete meal.
