1 medium head cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko recommended for extra crunch)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Celery sticks and blue cheese or ranch dressing (for serving)

Instructions
 

Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.

    In a large mixing bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk to combine.

      Slowly add the almond milk to the flour mixture, whisking until smooth and lump-free.

        In another bowl, place the breadcrumbs, ensuring they are ready for coating the cauliflower wings.

          Dip each cauliflower floret into the batter, allowing any excess to drip off, then coat in the breadcrumbs, pressing gently to adhere. Place on the lined baking sheet. Repeat until all florets are coated.

            Lightly drizzle the cauliflower wings with olive oil for extra crispiness.

              Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

                Remove from the oven and immediately toss the crispy wings in the buffalo sauce until fully coated.

                  Return the sauced cauliflower wings to the oven and bake for an additional 10 minutes to set the sauce.

                    Serve hot, garnished with chopped parsley, alongside celery sticks and your choice of dressing.
