Ingredients
  

1 lb fresh salmon fillet, skinless and bones removed

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Oil for frying (like vegetable or canola oil)

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 teaspoon sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon honey

Optional: sliced green onions and sesame seeds for garnish

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1-inch pieces. Make sure they are uniform to ensure even cooking.

    Set Up Breading Station: In one bowl, place the all-purpose flour. In a second bowl, combine the beaten eggs, and in a third bowl, mix panko breadcrumbs with garlic powder, paprika, salt, and pepper.

      Bread the Salmon:

        - Dip each salmon piece first into the flour, ensuring it is fully coated.

          - Next, dip into the beaten eggs, allowing excess to drip off.

            - Finally, coat each piece in the panko breadcrumb mixture, pressing gently to adhere. Set aside on a plate.

              Fry the Bites:

                - In a heavy-bottomed pan or deep fryer, heat about 1 inch of oil over medium-high heat until shimmering (approximately 350°F or 175°C).

                  - Fry the salmon bites in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon to transfer cooked bites to a plate lined with paper towels to drain excess oil.

                    Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth and well-combined.

                      Serve: Arrange the crispy salmon bites on a platter. Drizzle with Bang Bang Sauce or serve it on the side for dipping. Garnish with sliced green onions and sesame seeds if desired.
