12 oz pasta (penne or fettuccine)

2 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 cup heavy cream

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

3 cups fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes: Pour in the diced tomatoes with their juices and stir to combine. Bring the mixture to a simmer.

        Create the Creamy Base: Add the heavy cream, Italian seasoning, and red pepper flakes (if using). Stir well and let it simmer for about 5 minutes, allowing the sauce to thicken slightly.

          Incorporate Spinach: Gradually add the chopped spinach to the skillet, stirring until it wilts down, about 2-3 minutes.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, stirring to combine with the creamy tomato and spinach sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

              Finish with Cheese: Stir in the grated Parmesan cheese, mixing until melted and smooth. Season with salt and pepper to taste.
