Ingredients
  

4 boneless, skinless chicken breasts

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup sliced mushrooms

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt, pepper, and smoked paprika. Heat the olive oil in a large skillet over medium-high heat, then add the chicken. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.

    Sauté Vegetables: In the same skillet, add butter and reduce the heat to medium. Add the chopped onion and garlic, and sauté until translucent, about 2-3 minutes. Add sliced mushrooms and continue to cook until they are are softened and lightly browned, about 4-5 minutes.

      Make the Creamy Sauce: Pour the heavy cream into the skillet and stir well, scraping any browned bits from the bottom. Bring to a simmer, then reduce the heat to low. Stir in the Italian herbs and half of the shredded cheddar cheese, allowing it to melt into the sauce.

        Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the creamy sauce over the top. Let simmer for about 5 minutes, allowing the flavors to meld.

          Serve: Transfer the chicken to plates and ladle more of the creamy mushroom sauce over the top. Sprinkle with the remaining cheddar cheese and fresh parsley for garnish.
