Ingredients

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions

In a large pot over medium heat, add the ground beef (or turkey) and cook until browned, breaking it apart with a spoon. Drain any excess fat.

Add the chopped onion and minced garlic to the pot, sautéing until the onion becomes translucent, about 3-4 minutes.

Stir in the taco seasoning, allowing it to coat the meat and onions, cooking for 1-2 minutes to enhance the flavors.

Add the black beans, corn, diced tomatoes, and chicken broth to the pot. Bring the mixture to a boil.

Once boiling, reduce heat to low and let it simmer for about 15 minutes, allowing the flavors to meld.

Stir in the heavy cream, mixing well until fully incorporated. Let it heat through for an additional 5 minutes.

Add in the shredded cheddar cheese, stirring until melted and creamy. Season with salt and pepper to taste.

Serve hot, garnished with chopped cilantro and alongside crispy tortilla chips for dipping.
