4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup frozen peas

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, and paprika. Add the chicken to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Prepare the Rice: Add the rice to the skillet and stir to combine with the onions and garlic. Toast the rice for about 2 minutes, stirring frequently.

        Add Broth and Spices: Pour in the chicken broth, and add dried thyme, garlic powder, and some salt and pepper to taste. Bring to a simmer.

          Simmer the Dish: Once simmering, nestle the seared chicken thighs back into the skillet, ensuring they are partially submerged. Reduce heat to low, cover the skillet, and let it cook for about 20 minutes.

            Make it Creamy: After 20 minutes, add the heavy cream and frozen peas to the skillet. Gently stir to combine and cook for another 5-7 minutes until the rice is fully cooked and the sauce is creamy.
