12 oz penne pasta

1 lb Italian sausage (mild or spicy, your choice)

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, diced

6 cups fresh spinach, washed and roughly chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh basil or parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Sausage: In a large skillet over medium-high heat, add the olive oil and crumble in the Italian sausage. Cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the skillet.

      Sauté the Vegetables: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Make the Sauce: Pour in the chicken broth and bring the mixture to a simmer. Stir in the heavy cream, Italian seasoning, and grated Parmesan cheese. Season with salt, pepper, and red pepper flakes if using.

            Combine: Add the cooked sausage back into the skillet, and then add the drained pasta. Toss everything together until the pasta is coated in the creamy sauce.
