8 oz (225g) fettuccine or pasta of choice

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

10 oz (300g) mixed mushrooms (like cremini and shiitake), sliced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup (240g) ricotta cheese

1/2 cup (120ml) vegetable or chicken broth

1/2 cup (50g) grated Parmesan cheese, plus more for serving

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add Mushrooms: Add the sliced mushrooms, thyme, salt, and black pepper to the skillet. Sauté until the mushrooms are browned and tender, about 6-8 minutes.

        Combine Ricotta and Broth: In a medium bowl, whisk together the ricotta cheese and vegetable or chicken broth until smooth. If the mixture is too thick, add a splash of reserved pasta water to thin it out.

          Mix Everything Together: Once the mushrooms are well-cooked, lower the heat. Add the cooked pasta to the skillet along with the ricotta mixture. Gently toss to combine everything, adding more pasta water if necessary to achieve your desired creaminess.

            Add Parmesan and Lemon Zest: Stir in the grated Parmesan cheese and lemon zest, mixing well to ensure all ingredients are evenly coated. Taste and adjust seasoning with more salt or pepper if needed.

              Serve: Divide the creamy ricotta mushroom pasta into bowls. Garnish with fresh parsley and additional grated Parmesan before serving.
