Ingredients

1 lb ground beef

8 oz bowtie pasta

1 cup sweet corn (fresh or frozen)

1 cup heavy cream

1 packet ranch seasoning mix

1 cup beef broth

1 medium onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Cook Pasta: In a large pot, bring salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional minute until fragrant.

Brown the Beef: Add the ground beef to the skillet. Season with salt and pepper. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.

Add Corn and Ranch: Stir in the sweet corn and ranch seasoning mix. Cook for 2-3 minutes until the corn is heated through.

Create Creamy Sauce: Pour in the beef broth and heavy cream, and bring to a simmer. Let it cook for about 5-7 minutes, stirring occasionally, until the sauce thickens.

Combine Pasta: Add the cooked bowtie pasta and cherry tomatoes to the skillet. Stir well to combine and heat through for another 2-3 minutes.

Finish with Cheese: Remove the skillet from heat and sprinkle the shredded cheddar cheese over the top. Stir until melted and evenly distributed.

Garnish and Serve: Garnish with freshly chopped parsley and serve hot!
