1 pound boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

4 carrots, sliced

2 celery stalks, diced

1 cup frozen peas

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

1 cup heavy cream or coconut cream for a dairy-free version

2 tablespoons fresh lemon juice

2 tablespoons chopped fresh parsley (optional for garnish)

Instructions
 

In the slow cooker, place the boneless chicken breasts. Add the rinsed wild rice, diced onion, minced garlic, sliced carrots, diced celery, and frozen peas.

    Pour the low-sodium chicken broth over the ingredients. Add the thyme, rosemary, salt, and black pepper. Stir to combine.

      Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and wild rice is tender.

        Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.

          Stir in the heavy cream (or coconut cream) and fresh lemon juice. Allow the soup to cook for an additional 30 minutes on low to warm through.

            Adjust seasoning to taste, adding more salt, pepper, or lemon juice if desired.

              Serve hot, garnished with fresh parsley if using. Enjoy your cozy, creamy soup!
