Ingredients

8 ounces penne pasta

1 lb boneless, skinless chicken breasts, diced

1 packet ranch seasoning mix

8 oz cream cheese, softened

1 cup shredded cheddar cheese

½ cup bacon bits (cooked)

2 cups spinach (fresh)

1 tablespoon olive oil

½ cup chicken broth

Salt and pepper, to taste

Chopped green onions, for garnish

Instructions

Cook the Pasta: Start by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts to the skillet. Season with salt and pepper, and cook until the chicken is golden brown and fully cooked (about 5-7 minutes).

Add Cream Cheese and Ranch: Reduce the heat to low. Add the softened cream cheese and ranch seasoning mix to the chicken. Stir continuously until the cream cheese is melted and the mixture is creamy.

Mix in Cheese and Bacon: Next, pour in the chicken broth, and gently stir in the shredded cheddar cheese and bacon bits. Continue to mix until the cheese is melted and the sauce is well combined.

Combine with Spinach and Pasta: Add the spinach to the skillet and cook until wilted, about 2 minutes. Then, incorporate the cooked penne pasta into the creamy chicken mixture. Toss everything together until the pasta is evenly coated in the sauce.

Serve: Taste and adjust seasonings if necessary. Serve hot, garnished with chopped green onions for a fresh touch.
