8 oz fettuccine pasta

2 boneless, skinless chicken breasts, diced

1 cup mushrooms, sliced (cremini or button)

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package directions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

      Cook Mushrooms: In the same skillet, add the sliced mushrooms and sauté until they're tender and browned, about 4-5 minutes. Add minced garlic and Italian seasoning, cooking for an additional minute until fragrant.

        Make the Sauce: Lower the heat and pour in the heavy cream, stirring well to combine. Bring to a gentle simmer, and then mix in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, gradually add some reserved pasta water to achieve your desired consistency.

          Combine Ingredients: Add the cooked chicken and fettuccine to the skillet, tossing everything together until the pasta is coated with the creamy sauce. Check for seasoning and adjust with more salt and pepper if needed.
