1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 celery stalks, diced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon black pepper

6 cups chicken broth

1 cup heavy cream

8 oz (225g) rotini pasta

1 cup frozen corn

Salt to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, red bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Season the chicken breasts with Cajun seasoning, smoked paprika, dried thyme, and black pepper. Add the seasoned chicken to the pot and cook for 6-8 minutes, turning occasionally, until the chicken is cooked through.

      Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before shredding it into bite-sized pieces.

        Pour the chicken broth into the same pot, bringing it to a simmer. Add the heavy cream and stir well.

          Add the rotini pasta and frozen corn to the pot. Cook according to the pasta package instructions (usually about 8-10 minutes) until the pasta is al dente.

            Return the shredded chicken to the pot, stirring to combine. Allow the soup to heat through for an additional 2-3 minutes.

              Taste the soup and add salt if needed. Serve hot, garnished with fresh parsley.
