8 oz fettuccine pasta

2 chicken breasts, boneless and skinless

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Fettuccine: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Season the Chicken: Sprinkle Cajun seasoning all over the chicken breasts, ensuring they are well coated.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

        Sauté Vegetables: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced red bell pepper, and sauté for another 3-4 minutes.

          Make the Sauce: Pour in the heavy cream and chicken broth, stirring well to combine. Allow the mixture to simmer for about 5 minutes, letting it thicken slightly.

            Add Cheese and Season: Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

              Combine Pasta: Add the cooked fettuccine to the sauce and toss until the pasta is well coated. Add the sliced chicken on top and gently mix.

                Serve: Garnish with freshly chopped parsley and additional Parmesan if desired. Serve immediately.
