2 cups penne pasta

1 lb (450g) boneless, skinless chicken breasts

1 packet (1 oz) ranch seasoning mix

8 oz (225g) cream cheese, softened

1 cup shredded cheddar cheese

1 cup low-sodium chicken broth

1 cup cooked bacon, crumbled

1/2 cup green onions, chopped

Salt and pepper to taste

Optional: 1/2 cup sour cream for creamier texture

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and the ranch seasoning mix. In a large skillet over medium heat, add a splash of oil and cook the chicken until browned and cooked through (about 6-7 minutes per side). Once cooked, remove from skillet and let cool slightly before shredding.

      Make the Sauce: In the same skillet, reduce heat to low and add the chicken broth and cream cheese. Stir well until the cream cheese has melted and combined with the broth into a smooth sauce.

        Combine Ingredients: Add the shredded chicken, cooked bacon, and cheddar cheese to the skillet. Stir well to combine all ingredients, allowing the cheese to melt into the sauce. If you prefer a creamier consistency, add the optional sour cream and mix well.

          Mix in the Pasta: Add the cooked penne to the skillet, tossing to coat the pasta with the creamy chicken mixture thoroughly. Cook for an additional 2-3 minutes until everything is heated through.

            Garnish and Serve: Remove the skillet from heat, garnish with chopped green onions, and more crumbled bacon if desired. Serve hot.
