8 large portobello mushrooms, cleaned and stems removed

1 cup cooked crab meat (fresh or canned)

1/2 cup cream cheese, softened

1/4 cup mayonnaise

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1 tablespoon lemon juice

1 clove garlic, minced

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 teaspoon Old Bay seasoning (optional)

1/2 cup breadcrumbs (optional for topping)

Olive oil for drizzling

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the crab meat, cream cheese, mayonnaise, Parmesan cheese, parsley, lemon juice, garlic, Dijon mustard, and Old Bay seasoning if using. Mix well until all ingredients are thoroughly incorporated.

      Taste the mixture and add salt and pepper as needed.

        Place the cleaned portobello mushrooms on a baking sheet, gill side up. Lightly drizzle with olive oil and sprinkle with salt and pepper.

          Generously spoon the crab mixture into each portobello cap, filling them just above the rim. If desired, sprinkle breadcrumbs over the stuffed mushrooms for an added crunch.

            Drizzle a little more olive oil over the top of the stuffed mushrooms.

              Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the tops are golden brown and bubbly.

                Remove from the oven and let cool slightly before serving. Garnish with additional parsley if desired.
