4 large portobello mushrooms

1 cup cooked crab meat (lump crab for best flavor)

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped

1 teaspoon Old Bay seasoning

Salt and pepper to taste

Olive oil for drizzling

Lemon wedges for serving

Preheat your oven to 375°F (190°C).

    Clean the portobello mushrooms by gently wiping them with a damp cloth. Remove the stems and gills using a spoon to create space for the stuffing. Drizzle with a bit of olive oil and sprinkle with salt and pepper on both sides.

      In a mixing bowl, combine the softened cream cheese, cooked crab meat, grated Parmesan cheese, breadcrumbs, mayonnaise, Dijon mustard, minced garlic, lemon juice, parsley, and Old Bay seasoning. Mix well until all ingredients are thoroughly incorporated. Taste and adjust seasoning with salt and pepper as needed.

        Generously stuff each portobello cap with the crab mixture, pressing down slightly to pack it in.

          Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle a bit more olive oil on top of each stuffed mushroom for added richness.

            Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the topping is golden and bubbly.

              Remove from the oven and let cool slightly before serving. Garnish with additional parsley and serve with lemon wedges on the side.
