3 lbs Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream or half-and-half

1 cup kielbasa or smoked sausage, sliced (optional)

2 cups kale or spinach, chopped

1 tsp dried thyme

1 tsp caraway seeds

1 tsp salt, adjust to taste

½ tsp black pepper

2 tbsp olive oil

Fresh chives or parsley, chopped for garnish

Instructions
 

Prepare the Base: In a large slow cooker, add the diced Yukon Gold potatoes, chopped onion, and minced garlic. Pour in the broth, followed by the sausage if using. Stir to combine.

    Season the Soup: Add the dried thyme, caraway seeds, salt, and black pepper. Mix well to ensure all ingredients are seasoned evenly.

      Cook: Cover the slow cooker and set it to low heat. Let it cook for 6-8 hours or until the potatoes are tender.

        Blend for Creaminess: Once the potatoes are fork-tender, use an immersion blender to puree the soup until smooth. Alternatively, you can transfer half of the soup to a stand blender, blend until smooth, and then return it to the slow cooker.

          Finish the Soup: Stir in the heavy cream or half-and-half and the chopped kale or spinach. Cook on high for an additional 30 minutes, until the greens are wilted and the soup is heated through.

            Serve: Ladle the soup into bowls, garnish with fresh chives or parsley, and enjoy with some crusty bread on the side!
