1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 cups chicken broth

1 packet taco seasoning (about 1 oz)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

Juice of 1 lime

Optional toppings: avocado, shredded cheese, sour cream, cilantro, tortilla chips

Instructions
 

Prep the Ingredients: Begin by preparing your vegetables. Dice the onion, garlic, and bell pepper. Rinse and drain the black beans and corn.

    Layer the Soup: In the slow cooker, layer the diced onion, garlic, and bell pepper at the bottom.

      Add the Chicken: Place the chicken breasts on top of the vegetables.

        Combine Remaining Ingredients: In a mixing bowl, combine the black beans, corn, diced tomatoes (with juices), chicken broth, taco seasoning, cumin, chili powder, salt, and pepper. Stir well.

          Pour it In: Pour the mixture over the chicken in the slow cooker, ensuring the chicken is covered in the mixture.

            Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.

              Shred the Chicken: Once cooked, remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken back into the soup.

                Final Touch: Stir in the lime juice and adjust seasoning if necessary.
