1 lb ground beef or turkey

1 large onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper, chopped (any color)

1 can (15 oz) diced tomatoes, undrained

2 cups beef or vegetable broth

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup frozen peas (optional)

Fresh cilantro or parsley, for garnish

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Brown the Meat: In a large pot or Dutch oven, over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.

    Sauté the Aromatics: Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes or until the onion becomes translucent.

      Add Vegetables: Stir in the diced carrots, celery, and bell pepper. Cook for another 5 minutes, allowing the vegetables to soften.

        Incorporate the Liquids: Add the diced tomatoes (with their juices), beef or vegetable broth, kidney beans, corn, chili powder, cumin, smoked paprika, salt, and pepper. Mix everything well.

          Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-30 minutes, stirring occasionally. This allows the flavors to meld beautifully.

            Final Touches: If using, add the frozen peas during the last 5 minutes of cooking. Taste the soup and adjust seasoning as needed.

              Serve: Ladle the hot Cowboy Soup into bowls. Garnish with fresh cilantro or parsley and a dollop of sour cream or Greek yogurt if desired.
