Ingredients
  

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 cup diced onion

1 cup diced bell pepper (red or green)

1 cup corn (frozen or canned)

2 cups shredded cheddar cheese

1 cup cream cheese, softened

1 tsp garlic powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain any excess fat.

    Add the diced onion, bell pepper, garlic powder, cumin, smoked paprika, salt, and pepper to the skillet. Sauté until the vegetables are softened, about 5-7 minutes.

      Stir in the black beans, diced tomatoes with green chilies, and corn. Cook for another 3-4 minutes until heated through.

        Lower the heat to medium-low and add the cream cheese, stirring until melted and combined.

          Add the shredded cheddar cheese, mixing until melted and creamy. If the queso is too thick, you can alleviate it by adding a splash of milk to achieve your desired consistency.

            Once fully combined and heated through, remove from heat and transfer to a serving bowl.

              Garnish with chopped cilantro and serve warm with tortilla chips.
