1 cup cottage cheese

1 can (15 oz) chickpeas, drained and rinsed

1 medium cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Feta cheese crumbles (for garnish, optional)

Instructions
 

In a large bowl, combine the cottage cheese and chickpeas. Gently mix until well combined.

    Add the diced cucumber, red bell pepper, red onion, cherry tomatoes, and fresh parsley to the bowl.

      In a small jar or bowl, whisk together the olive oil, lemon juice, salt, pepper, and smoked paprika. Adjust seasoning to taste.

        Pour the dressing over the salad ingredients and toss gently to coat everything evenly.

          Taste the salad and adjust seasoning if necessary. If desired, sprinkle feta cheese crumbles on top for added flavor.

            Serve immediately, or refrigerate for 30 minutes to let flavors meld.
