1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 cup potatoes, diced (Yukon gold or red)

4 cups chicken broth

1 can (14.5 oz) diced tomatoes

3 cups kale, chopped (remove stems)

1 tsp dried oregano

1 tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

Parmesan cheese for garnish (optional)

Instructions
 

Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes.

    Sauté Vegetables: Add the diced onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.

      Add Potatoes and Broth: Stir in the diced potatoes, chicken broth, diced tomatoes (with juice), oregano, and thyme. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the potatoes are tender.

          Incorporate Kale: Add the chopped kale to the pot and stir. Cook for an additional 5-7 minutes until the kale is wilted and tender.

            Season & Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with grated Parmesan cheese if desired.
