4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon sugar

4 cups beef broth (or vegetable broth for vegetarian option)

1 cup dry white wine

2 tablespoons all-purpose flour

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 bay leaf

Freshly ground black pepper to taste

1 baguette, sliced into 1-inch thick pieces

1 ½ cups shredded Gruyère cheese (or a mix of Gruyère and mozzarella)

Chopped fresh parsley for garnish (optional)

Instructions
 

Sauté Onions: In a large Dutch oven or heavy pot, melt the butter and olive oil over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, for about 30-40 minutes until the onions are deep golden brown and caramelized. Reduce the heat if they begin to burn.

    Add Flour: Sprinkle the flour over the caramelized onions, stirring well to coat. Cook for another 2-3 minutes to cook off the raw flour taste.

      Deglaze: Pour in the white wine to deglaze the pot, scraping up any brown bits stuck to the bottom. Let it simmer for about 5 minutes until reduced slightly.

        Add Broth and Herbs: Add the beef broth, thyme, bay leaf, and black pepper. Bring to a simmer and let it cook for an additional 20-25 minutes to develop flavors. Taste and adjust seasoning as needed.

          Prepare Cheesy Toast: While the soup is simmering, preheat the broiler in your oven. Arrange the baguette slices on a baking sheet. Toast under the broiler for about 1-2 minutes on each side until golden and crispy. Remove from the oven, sprinkle with Gruyère cheese, and return to the broiler until the cheese is bubbly and golden.

            Serve: Discard the bay leaf from the soup. Ladle the hot soup into bowls, top each with a cheesy toast, and sprinkle with fresh parsley if desired.
