1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/3 cup granulated sugar

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 tablespoon all-purpose flour

Zest of 1 lemon (optional)

Pinch of salt

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or cooking spray.

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 1/3 cup granulated sugar. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of the prepared springform pan to form an even layer.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add in 1 cup of granulated sugar and continue to beat until well combined.

        Add Flavorings: Mix in the vanilla extract, flour, and optional lemon zest until incorporated.

          Incorporate Eggs and Sour Cream: Add the eggs one at a time, mixing on low speed just until blended after each addition. Do not overmix. Gently fold in the sour cream and a pinch of salt until everything is well combined.

            Bake the Cheesecake: Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly (it will firm up as it cools).

              Cool Down: Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for 1 hour to prevent cracks. Afterward, remove it from the oven and chill it in the refrigerator for at least 4 hours, preferably overnight.
