Ingredients
  

For the Meatloaf:

1 ½ pounds ground beef (80/20)

1 cup breadcrumbs (preferably Italian seasoned)

½ cup onion, finely chopped

½ cup bell pepper, finely chopped

2 cloves garlic, minced

1 large egg

¾ cup milk

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

¼ teaspoon smoked paprika

For the Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

For the Mashed Potatoes:

2 pounds Yukon gold potatoes, peeled and cubed

½ cup heavy cream

4 tablespoons unsalted butter

Salt and pepper to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, bell pepper, minced garlic, egg, milk, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and smoked paprika. Mix well until all ingredients are incorporated evenly.

      Shape the Meatloaf: Transfer the mixture to a loaf pan or shape it into a loaf on a parchment-lined baking sheet. Ensure it is compact and even in shape.

        Make the Glaze: In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze over the top of the meatloaf.

          Bake: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Remove from the oven and let it rest for 10 minutes before slicing.

            Boil the Potatoes: While the meatloaf is baking, bring a large pot of salted water to a boil. Add the cubed potatoes and cook until they are fork-tender, about 15-20 minutes.

              Mash the Potatoes: Drain the potatoes and return them to the pot. Add heavy cream and butter, then mash until smooth and creamy. Season with salt and pepper to taste. If desired, garnish with chopped chives or parsley.

                Serve: Slice the meatloaf and serve it hot alongside generous servings of creamy mashed potatoes. Drizzle the remaining glaze over the meatloaf slices, if desired.
