Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lime juice (about 2-3 limes)

1/4 cup fresh cilantro, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

Zest of 1 lime

Lime wedges and additional cilantro for garnish

Instructions

In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, cumin, paprika, salt, pepper, olive oil, and lime zest until well combined.

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are evenly coated.

Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4-6 hours for deeper flavor.

Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking.

Remove the chicken from the marinade, allowing excess to drip off. Discard the marinade.

Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.

Slice the chicken and serve garnished with lime wedges and additional cilantro.
