1 lb beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (red or green), sliced

1 onion, sliced

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper to taste

Cooked white rice (for serving)

Green onions (sliced for garnish)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, and cornstarch. Mix well to coat the beef evenly. Let it marinate for about 15 minutes.

    Prepare the Sauce: In a small bowl, mix the oyster sauce, rice vinegar, and sesame oil. Set aside.

      Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until the beef is browned but not fully cooked. Remove the beef from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, onion, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Combine and Finish: Return the beef to the skillet and pour the sauce over the mixture. Toss everything together and continue to cook for another 2-3 minutes until the beef is cooked through and the sauce thickens slightly. Season with salt and pepper to taste.

            Serve: Serve the pepper steak over cooked white rice and garnish with sliced green onions.
