4 large russet potatoes

2 cups shredded cheddar cheese

1 can (15 oz) chili (with beans or without, your choice)

1 tbsp olive oil

Salt and pepper, to taste

1 tsp garlic powder

1 tsp paprika

1/2 cup sour cream (for serving)

1/4 cup sliced green onions (for garnish)

1/4 cup jalapeño slices (optional, for garnish)

Instructions
 

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash the russet potatoes thoroughly and cut them into thick fries (about 1/2 inch wide).

    Season the Fries: In a large bowl, toss the potato fries with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.

      Bake the Fries: Spread the seasoned potato fries on a baking sheet in a single layer. Bake in the preheated oven for 30-35 minutes, flipping halfway through, until they are crisp and golden brown.

        Heat the Chili: While the fries are baking, heat the chili in a small saucepan over medium heat until it is warmed through, stirring occasionally. You can also use microwave if preferred.

          Assemble the Dish: Once the fries are done, remove them from the oven. Place them on a serving platter and immediately sprinkle the shredded cheddar cheese on top.

            Add Chili: Pour the hot chili over the cheese-covered fries.

              Garnish and Serve: Finish off by adding a dollop of sour cream, followed by sliced green onions and jalapeños if you like extra heat. Serve immediately while hot and gooey!
