Chicken, Zucchini and Fresh Corn Burgers

Ingredients
  

1 lb ground chicken

1 medium zucchini, finely grated

1 cup fresh corn kernels (about 2 ears)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

Salt and pepper, to taste

1 egg, beaten

2 tbsp olive oil (for cooking)

Burger buns (your choice)

Sliced avocado, lettuce, and tomato (for serving)

Instructions
 

Prepare the Zucchini: Squeeze the grated zucchini in a clean kitchen towel to remove excess moisture. Set aside.

    Mix the Ingredients: In a large mixing bowl, combine the ground chicken, grated zucchini, corn kernels, breadcrumbs, Parmesan cheese, cilantro, garlic, cumin, paprika, salt, pepper, and the beaten egg. Mix well until all ingredients are evenly incorporated.

      Form the Patties: Divide the mixture into 4 equal portions and shape them into patties, about 1/2-inch thick. Place them on a plate and refrigerate for at least 15 minutes to help them hold their shape while cooking.

        Cook the Burgers: Heat olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet. Cook for 5-6 minutes on each side or until the burgers are golden brown and fully cooked through (internal temperature should reach 165°F / 74°C).

          Assemble the Burgers: Toast the burger buns lightly, then layer with avocado slices, lettuce, and tomato. Place the cooked chicken zucchini corn burger on top and add any additional condiments or toppings you desire.

            Serve: Enjoy your delicious, homemade chicken, zucchini, and fresh corn burgers with a side of sweet potato fries or a fresh salad.
