Ingredients
  

1 lb ground chicken

1 medium zucchini, grated and excess moisture squeezed out

1 cup fresh corn kernels (about 2 ears of corn)

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (optional)

1 large egg

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

Olive oil, for cooking

Whole grain burger buns

Lettuce leaves, for serving

Sliced tomato and avocado, for topping

Instructions
 

In a large mixing bowl, combine the ground chicken, grated zucchini, fresh corn, breadcrumbs, red onion, garlic, cilantro, and the egg.

    Season the mixture with smoked paprika, cumin, salt, and pepper. Mix everything together until well incorporated.

      Divide the mixture into 4 equal portions and shape them into patties.

        Heat a skillet or grill over medium heat and add a drizzle of olive oil to prevent sticking.

          Cook the patties for about 5-6 minutes on each side, or until they are fully cooked through (internal temperature should reach 165°F).

            While the burgers are cooking, toast your whole grain burger buns on a separate pan or grill for added flavor.

              Assemble the burgers by placing a patty on the bottom half of the bun, followed by a lettuce leaf, tomato slice, and avocado as desired. Top it off with the other half of the bun.
