Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, sliced thinly

4 cloves of garlic, minced

1 inch ginger, minced

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon rice vinegar

1 tablespoon brown sugar

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 bell pepper (red or green), sliced

1 onion, sliced

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

In a bowl, combine the sliced chicken, soy sauce, oyster sauce, rice vinegar, and brown sugar. Toss to coat evenly and let marinate for 15 minutes.

    In a separate bowl, mix the cornstarch with a pinch of salt and pepper. Remove the chicken from the marinade and toss it in the cornstarch until well coated.

      Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        In the same skillet, add another tablespoon of vegetable oil. Sauté the minced garlic and ginger for about 30 seconds until fragrant.

          Add the sliced bell pepper and onion to the skillet and stir-fry for 3-4 minutes until they start to soften.

            Return the cooked chicken to the skillet, tossing everything together. Stir in any remaining marinade from the bowl, and cook for another 2-3 minutes until everything is hot and well combined.

              Taste and adjust seasoning with additional salt and pepper if needed.

                Serve the chicken hot, garnished with chopped green onions and sesame seeds.
