Chicken Tacos with Fresh Salsa

Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon taco seasoning (store-bought or homemade)

Salt and pepper to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, diced

1/2 cup shredded cheese (cheddar or Monterey Jack)

1 lime, cut into wedges

Fresh Salsa Ingredients:

2 ripe tomatoes, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Salt to taste

Instructions
 

Prepare the Chicken:

    - In a bowl, combine olive oil, taco seasoning, salt, and pepper.

      - Add the chicken breasts and coat them well with the seasoning mixture. Let marinate for at least 15 minutes.

        Cook the Chicken:

          - Preheat a grill or skillet over medium-high heat.

            - Cook the chicken for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F/75°C).

              - Remove from heat and let rest for 5 minutes before slicing into thin strips.

                Make the Fresh Salsa:

                  - In a bowl, mix the diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Toss together and adjust seasoning as needed. Set aside.

                    Warm the Tortillas:

                      - On the grill or in a skillet, warm the corn tortillas for about 30 seconds on each side until they are pliable and slightly toasted.

                        Assemble the Tacos:

                          - Place a few strips of the grilled chicken on each tortilla.
