4 medium zucchini

1 pound ground chicken

1 cup marinara sauce (preferably low-carb)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian seasoning

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the zucchini: Cut each zucchini in half lengthwise and scoop out the center with a spoon, creating a boat. Make sure to leave enough flesh around the edges for stability. Place the zucchini boats on a baking sheet lined with parchment paper.

      Cook the ground chicken: In a skillet over medium heat, add the ground chicken and cook until browned and fully cooked, about 5-7 minutes.

        Add seasonings: Stir in the marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes to combine flavors.

          Stuff the zucchini: Carefully spoon the chicken mixture into each zucchini boat, packing it down slightly.

            Top with cheese: Sprinkle shredded mozzarella and grated Parmesan cheese generously over the stuffed zucchini.

              Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.

                Garnish and serve: Remove from the oven and garnish with fresh basil, if desired. Serve hot.
