For the Chicken Stew:

1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups chicken broth

1 cup heavy cream

1 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

For the Dumplings:

2 cups all-purpose flour

1 tbsp baking powder

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

2 tbsp unsalted butter, melted

1 cup milk

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until they're golden brown, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

      Add Broth and Seasoning: Pour in the chicken broth and add the cooked chicken back into the pot. Stir in thyme, rosemary, salt, and pepper. Bring to a gentle simmer for about 10-15 minutes.

        Incorporate Cream: Once the chicken stew has simmered, stir in the heavy cream. Let it simmer for another 5 minutes, allowing the flavors to meld.

          Prepare the Dumplings: In a mixing bowl, combine flour, baking powder, salt, black pepper, and garlic powder. In a separate bowl, mix the melted butter and milk. Gradually combine the dry and wet ingredients until just mixed. The batter should be slightly thick.

            Dollop the Dumplings: Using a spoon, drop dollops of the dumpling batter into the simmering chicken stew. Cover the pot with a lid and cook for an additional 15-20 minutes without lifting the lid. The dumplings should rise and be cooked through.

              Serve: Once the dumplings are fluffy and cooked, ladle the chicken and dumplings into bowls. Garnish with fresh parsley and enjoy!
