1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

4 cups green cabbage, finely shredded

1 cup bell pepper, sliced (any color)

1 medium onion, thinly sliced

3 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 tablespoon vegetable oil (for cooking)

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, mix the sliced chicken with soy sauce, oyster sauce, sesame oil, and black pepper. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Ingredients: Wash and chop the cabbage, bell pepper, onion, garlic, and ginger. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken strips in a single layer. Cook for about 5-7 minutes, or until the chicken is golden and cooked through. Remove from skillet and set aside.

        Stir-Fry Vegetables: In the same skillet, add a bit more oil if needed. Add the minced garlic, grated ginger, and sliced onion. Stir-fry for 1-2 minutes until fragrant and the onion becomes translucent.

          Add Cabbage and Bell Pepper: Toss in the shredded cabbage and bell pepper. Stir-fry for about 4-5 minutes or until the cabbage is tender but still crisp.

            Combine Chicken and Season: Return the cooked chicken to the skillet. Sprinkle with red pepper flakes and give everything a good stir to combine. Taste and adjust seasoning with salt and pepper as desired.

              Serve: Remove from heat and transfer the stir-fry to a serving dish. Garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or noodles, if desired.
