Ingredients
  

2 boneless, skinless chicken breasts

1 large sweet potato, peeled and cubed

1 cup jasmine rice

2 cups low-sodium chicken broth

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

2 cups fresh spinach leaves

¼ cup feta cheese, crumbled (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the cubed sweet potato with 1 tablespoon of olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Spread them out on a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until tender and slightly caramelized, flipping halfway through.

    Cook the Rice: While the sweet potatoes are roasting, rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15-18 minutes, or until the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

      Cook the Chicken: While the rice is resting, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Add the chicken to the pan and cook for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Remove from the skillet and let rest for a few minutes before slicing.

        Assemble the Bowl: In each serving bowl, add a portion of the cooked jasmine rice as a base. Top with sliced chicken, roasted sweet potatoes, and a handful of fresh spinach. If desired, sprinkle feta cheese over the top and garnish with chopped parsley.
