Ingredients
  

2 cups cooked chicken breast, shredded

1 large avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce (romaine or iceberg)

1/2 cup red onion, thinly sliced

1 bell pepper (any color), sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

4 large tortillas (whole wheat, corn, or your choice)

Optional: sour cream or Greek yogurt for serving

Instructions
 

In a large bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, shredded lettuce, red onion, bell pepper, and chopped cilantro.

    Squeeze the juice of one lime over the mixture, then add the cumin, paprika, salt, and pepper. Toss gently to combine all ingredients well.

      Warm the tortillas in a skillet over low heat for about 30 seconds on each side until pliable.

        To assemble, lay a warm tortilla flat on a plate. Spoon a generous amount of the chicken mixture onto one side of the tortilla, leaving some space at the edges.

          Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

            Optionally, serve with a dollop of sour cream or Greek yogurt on the side for added creaminess.
