Ingredients

2 cups rotini pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

4 cloves garlic, minced

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup frozen peas

1/2 cup breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

In a large pot, bring salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove from heat.

In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring to combine, and bring to a simmer.

Add in the grated Parmesan cheese and shredded mozzarella cheese, stirring until the cheeses melt and the sauce is creamy. Toss in the frozen peas and mix well.

Combine the cooked pasta with the chicken and Alfredo sauce, stirring until everything is evenly coated.

Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle breadcrumbs on top for a crispy finish.

Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving.
