1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, canned, or frozen)

2 cups cooked rice (white or brown)

1 cup shredded cheddar cheese (or Mexican blend)

1 cup sour cream

1 jalapeño, sliced (optional)

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a large skillet over medium heat, brown the ground beef until cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the skillet, sautéing until the onion is soft and translucent, about 3-4 minutes.

      Stir in the taco seasoning, black beans, diced tomatoes (with their juices), and corn. Mix well and allow to simmer for about 5 minutes, so the flavors meld together.

        Incorporate the cooked rice into the mixture and stir until everything is evenly combined. Let it cook for another 2-3 minutes, letting the rice absorb some of the flavors.
