Ingredients
  

2 cups broccoli florets, fresh or frozen

2 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth (or chicken broth)

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

2 tablespoons butter

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional for some heat)

Fresh parsley or chives for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes, or until potatoes are tender.

        Add the broccoli florets to the pot and continue to simmer for an additional 5-7 minutes until the broccoli is tender.

          Use an immersion blender to carefully blend the soup until smooth (or blend in batches in a regular blender). If you prefer a chunkier texture, blend only half of the soup and leave the rest.

            Stir in the heavy cream, shredded cheddar cheese, salt, black pepper, smoked paprika, and cayenne pepper (if using). Keep stirring until the cheese is melted and the soup is creamy.

              Taste and adjust seasoning if necessary.

                Serve hot, garnished with fresh parsley or chives for a pop of color.
