For the Cookie Dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup chocolate chips (optional)

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice (optional for tanginess)

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

      - Add the powdered sugar, vanilla extract, and lemon juice (if using). Mix until well combined.

        - Chill the cheesecake filling in the refrigerator for 30 minutes to firm up.

          Make the Cookie Dough:

            - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

              - Beat in the eggs one at a time and then stir in the vanilla extract.

                - In a separate bowl, whisk together the flour, baking soda, and salt.

                  - Gradually mix the dry ingredients into the wet ingredients until just combined. If desired, fold in the chocolate chips.

                    Assemble the Cookies:

                      - Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

                        - Take about 2 tablespoons of cookie dough and flatten it into a disc in your palm.

                          - Place about 1 teaspoon of the chilled cheesecake filling in the center and fold the dough around the filling, sealing it completely to form a ball.

                            - Repeat this process for all cookies, placing them on the prepared baking sheets spaced about 2 inches apart.

                              Bake:
