Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup carrots, diced

1 cup celery, diced

4 cups beef broth

3 medium potatoes, peeled and diced

1 cup shredded cheddar cheese

1 cup milk

2 tbsp Worcestershire sauce

1 tsp Dijon mustard

Salt and pepper to taste

2 tbsp olive oil

1 tsp smoked paprika

1/4 cup sour cream (for garnish)

Chopped green onions (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent.

      Stir in the carrots and celery, cooking for an additional 3-4 minutes until they soften slightly.

        Add the beef broth, diced potatoes, Worcestershire sauce, Dijon mustard, smoked paprika, and season with salt and pepper. Bring the mixture to a boil.

          Reduce the heat and let the soup simmer for about 15-20 minutes, or until the potatoes are tender.

            Once the potatoes are cooked, lower the heat and stir in the milk and shredded cheddar cheese, mixing until the cheese is melted and the soup is creamy.

              Taste and adjust seasoning if necessary. Allow the soup to warm through for a few more minutes.

                Serve hot, garnished with a dollop of sour cream and chopped green onions.
