2 pounds russet potatoes, peeled and cubed

1 cup sharp cheddar cheese, grated

1/2 cup milk (or heavy cream for extra richness)

1/4 cup unsalted butter

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Cook the Potatoes: Place the cubed potatoes in a large pot and fill it with cold water. Add a pinch of salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain & Dry: Drain the potatoes in a colander and let them sit for a couple of minutes to steam dry, ensuring that they are not watery.

      Mash the Potatoes: Return the potatoes to the pot. Using a potato masher or a ricer, mash the potatoes until smooth.

        Add Butter & Milk: While the potatoes are still warm, add the unsalted butter and milk. Mix until well combined and creamy.

          Incorporate Cheese & Seasonings: Stir in the grated cheddar cheese, garlic powder, onion powder, and additional salt and pepper to taste. Mix until the cheese is melted and everything is evenly incorporated.

            Final Adjustments: Taste and adjust seasoning if necessary. If you prefer creamier potatoes, feel free to add more milk.

              Serve: Transfer the mashed potatoes to a serving dish. Garnish with chopped chives or parsley for a fresh touch.
