2 pounds of green cabbage, finely chopped

1 pound of potatoes, peeled and diced

1 cup of whole milk

4 tablespoons of unsalted butter

4 green onions, chopped (green parts reserved for garnish)

Salt and pepper to taste

1 cup of cooked, shredded corned beef (optional for topping)

Fresh parsley, chopped for garnish

Instructions
 

Begin by bringing a large pot of salted water to a boil. Add the diced potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

    In the same pot, add the chopped cabbage along with a splash of water. Cover and steam for about 5 minutes, until the cabbage is tender. Drain any excess water.

      Return the potatoes to the pot and mash them with a potato masher. Add the butter and warm milk, mixing until creamy.

        Fold in the steamed cabbage and chopped green onions, then season with salt and pepper to taste. Combine everything thoroughly.

          For serving, place generous portions of the colcannon in bowls. Top with shredded corned beef if using, and garnish with reserved green onions and chopped parsley.
