Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

2 tsp baking powder

1 tsp vanilla extract

½ tsp salt

1 cup shredded coconut (optional)

1 cup chopped walnuts or pecans (optional)

½ cup cream cheese, softened (for frosting)

2 cups powdered sugar (for frosting)

2 tbsp milk (for frosting)

1 tsp vanilla extract (for frosting)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the creamed mixture, alternating with whole milk. Mix until just combined.

Add Coconut and Nuts (Optional): If using, fold in the shredded coconut and chopped nuts into the batter for extra flavor and texture.

Bake the Cakes: Divide the batter evenly between the prepared baking pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Once baked, let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting: In a medium bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.

Assemble the Cake: Once the cakes have cooled, place one layer on a serving plate and spread a generous layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the entire cake.

Decorate: Optional: Garnish the cake with additional shredded coconut or chopped nuts on the sides for a beautiful finish.

Serve: Slice and serve this deliciously sweet Catch a Husband Cake at gatherings, or enjoy it for a romantic occasion!
